Happy Monday, readers! As per usual, the weekend blew by in a flash and this Monday feels slightly overwhelming to me. Anyone else in this boat? I will say that though our weekends lately have been a mad dash from one thing to the next, I’ve been making it a point to spend a bit more time in the kitchen here and there so we’re not eating out every weekend meal. Because cooking has needed to be ‘quick’ lately, I don’t always feel like what I’m whipping up is quite ‘blog worthy’. But these jalapeño cheddar cornbread muffins? Oh, these are soooo blog worthy.
I love cornbread. Looooooove. I could eat it for breakfast, lunch, and dinner any time of the year. Need a reference to how much I love it? When I was doing Whole30, Sam and I went to this healthy little spot for some hearty salads one weekend. But what did they have (of course) the day we go that they only have as a special every now and then? THEIR MINI CORN BREADS. My husband has a video of me nearly crying as we stood in line and I realized I couldn’t have one to perfectly pair with my steak salad. So yes, I would say I’m a big fan.
So ever since that moment, I’ve been craving. As I searched for some gluten-free (Sam’s tummy doesn’t like gluten!) compliant recipes, I got skeptical. To be honest, gluten free baking just isn’t my jam. I like baking from a box, y’all. Betty Crocker is a saint in my book. I’d take Duncan Hines chocolate cake over anything fancy and homemade any day. So adjusting to gluten free baking has been a stretch. #keepingitreal #reallifewifemoments
As I searched for recipes, I found this once which ALSO included almond milk in the ingredients. Talk about adding to the skepticism. But I had purchased a big ol’ jug of fancy almond milk while attempting Whole30 so I finally decided… why not?? If I’m going to get adventurous here, I may as well use up what I got.
And here I am blogging them. Can you believe it? I followed this recipe to a T and it didn’t disappoint. Normally, I alter here and there but because this already was way out of my comfort zone, I read the directions about 100 times. But it really was SO easy! It was a great combination of my love of box baking and throwing in some fresh ingredients. Really, they are as yummy as they look!
The entire batch was gone by Sunday night! As was a stick of butter and a generous amount of our bottle of honey. But I will say, that is probably for the best. They’re super moist and fluffy the day of, but after that… good old gluten is missed and they get dry. It just is what it is. #glutenfreeproblems #somanyhashtagstoday
But I’m off to go pick up more of the mix and fixin’s to make one more batch because that jug of almond milk seems to have a bottomless pit. But hey, I’ll take it since these little babies were so delish and SO husband approved! I paired them with BBQ chicken and veggies, but really…. these could go with anything if you like cornbread as much as I do.
